George Zervas achieved a degree in Animal Production at the University of Athens in 1974. After a period lecturing in the department of Animal Feeding and nutrition at the University of Athens he spent three years in the United Kingdom to undertake a PhD, in the nutrition of grazing ruminants.

Dr Zervas has published widely in the field of ruminant nutrition and is actively involved in research in Greece on livestock systems in Mediterranian regions, including:
